Ingredients
1lb (500g)Mushrooms
1med-smallOnion
1 cup (300ml)Italian dressing(or enough to cover mushrooms)
Instructions
Wash the mushrooms under running water. Make sure to remove all dirt and cut off any tough stems. Cut mushrooms into fourths or leave as is if they are very small.
Bring the mushrooms to a boil in a pot of water and cook the mushrooms for about 4-5 minutes. They will reduce in size. Once done, drain the mushrooms and let them cool slightly. Use a fine mesh sieve for easier draining.
While the mushrooms are cooking, coarsely chop a small-medium onion.
Add some of the cooked mushrooms to a jar with a lid. Then add a bit of the chopped onions. Keep layering the mushrooms and the onions until both are used up.
Pour the dressing over the mushrooms until they are mostly covered with the dressing. Refrigerate for 12 hours or overnight.
Serve cold. Can sprinkle with green onion for some garnish.
Notes
-Please take the serving sizes with a grain of salt. With a hearty meal and other sides, this should be enough for 4 people. As a snack, it's only enough for 1-2 people-Calories will be different depending on the dressing you use. The one sold in Germany, did not have any oils in there, so the calorie count is very low.
