8 oz (225g)Chocolate chip cookies(should be crunchy not chewy)
8.8 oz (250g)Mascarpone cheese
8.8 oz (250g)Quark
⅓ cup (80g)Sugar
1 cup (240g)Heavy whipping cream
1½ tspVanilla sugar(or use 1 tbsp powdered sugar and 1 tsp vanilla extract)
Instructions
Wash the grapes, remove them from stems, and let them dry. Set aside.
Using a zip lock bag (or any other method), crush the chocolate chip cookies into small crumbs. Set aside.
In a medium sized bowl, combine mascarpone cheese, quark and sugar. Beat with an electric hand mixer until the sugar is well-incorporated (about 3-5 minutes). Set aside.
In a separate bowl, beat the heavy whipping cream and vanilla sugar until done (about 5 minutes). You can also use 1 tbsp powdered sugar and 1 tsp vanilla extract instead of the vanilla sugar.
Once the whipped cream is done, transfer the mascarpone and quark mixture into the whipped cream. Beat for another minute until everything is well combined.
To serve, layer the grapes, cream and cookies in a glass until full. Or serve in one big bowl by layering the grapes and the cookie crumbs on the top of the cream and ladle into dessert bowls with a big serving spoon.
Notes
- This recipe can be made 1 day in advance, but the cream, grapes and crushed cookies should be stored separately. Combine shortly before serving.- Leftovers can be kept in the fridge for up to 2 days.
