Ingredients
2Zucchini,medium-small
1-2tbspOlive oil
1tbspWhite wine vinegar
1tspGarlic powder,or enough to sprinkle on all sides
ΒΌtspSalt
Ground pepper(optional)
Instructions
Preheat the grill to medium heat.
Wash the zucchini and cut off the ends from each side. Slice the zucchini into slices about 1/4 inch thick. I like using my mandoline slicer on the thickest setting for this. Place into a casserole dish or another dish where you can lay the slices in a single layer.
Sprinkle the olive oil on the top of the slices and use a brush or gently mix so that the oil is on all the sides of the slices.
Sprinkle white wine vinegar and gently mix again. Sprinkle with garlic powder on all sides.
Grill the slices 2-4 minutes per side or until the zucchini gets char marks but is still firm to the bite.
Remove the zucchini back into the same dish. Sprinkle with salt and ground black pepper (if using).
Notes
- You can add the salt and pepper at the time of adding garlic powder, but salt brings out the zucchini juices, which then makes the zucchini more soggy when you grill it.- Totally optional, but adding a bit more white wine vinegar to the zucchini after grilling gives it a more tangy flavor.
