Dulce de Leche Waffle Cake (Вафли)

This dulce de leche waffle cake has 3 ingredients, is easy to make, and is full of amazing buttery, caramel-ly flavor. Also, it looks amazing once it’s cut into these well-known diamond pieces!

Each Russian/Ukrainian/Slavic person probably knows and loves this cake. Though is it even a cake when it’s cut like that? It’s served on special occasions such as weddings and birthdays and the flavors are really something.

I’ve been making this cake for a few years but each time something didn’t taste quite right. I think I’ve finally nailed the recipe. Although the recipe is really just dulce de leche and butter. Ha. So really it’s the proportions of those ingredients that matter.

Some people add a bit of lemon juice to the mixture, or even whipping cream, but for me it’s the basics that matter. The cake really doesn’t need anything more.

Ingredients for Dulce de Leche Waffles

  • Butter – make sure it is at room temperature and very soft.
  • Dulce de Leche – If you can’t find any, make your own by cooking a can of condensed milk.
  • Dry Waffle sheets – available in most Russian and maybe European stores.

How to make Dulce de Leche

You can make your own Dulce de Leche at Home. In fact, the original cake is actually made with the homemade version (I don’t think I’ve actually bought Dulce de Leche in my life).

You will need a can of sweetened condensed milk. Place it into a pot and cover with water. Bring the water to a boil, then reduce to lowest setting and cook for at least 3 hours. Add more water to keep the can covered during cooking.

Remove the label from the can prior to cooking. I also recommend removing the glue that is on the can and that holds the label. Otherwise, it will leave a residue in your pot and make it unusable for future cooking (you don’t want the residue landing in your food). You can also have a dedicated pot for cooking condensed milk😅

How to Make These Waffles

Start off by beating the softened butter until light and fluffy. I like to use my KitchenAid mixer for this, but a small handheld mixer works just as well.

Add one can of the cooked condensed milk or the equivalent in pre-made Dulce de Leche. Beat until well-combined. Scrape off the sides as needed.

Place one waffle sheet on the table. Add some of the cream filling. Cover thoroughly from edge to edge filling all the little waffle holes.

However, make sure not to overfill the waffle sheets as the cream will come out from the edges once you press down on the cake.

Place a second waffle sheet on the top of the first one. Gently press it down all around.

Continue to frost each layer and add another waffle layer on the top until all the layers are used up. The top layer should not have any cream on the top.

Place a cutting board and something heavy (like a full tea kettle or water karafe) on the top to press the cake layers together. I used a 3 liter can of olive oil that I had on hand.

Let stand for at least 2 hours.

Remove the heavyweight from the cake and cut into desired pieces.

How to Serve

Serve this waffle cake with tea or coffee. The waffles turn out sweet and go well with an unsweetened drink.

Tips and Tricks for Making

My biggest tip is to not overfill the layers with cream. Otherwise, when you put the heavyweight on the top, the cream will come out form the sides. Also, you wont have enough cream for all the layers. The amount in this recipe is perfect for the amount of waffles without overfilling the layers.

How to Store the Waffle Cake

Store the waffle cake pieces covered in the fridge for 3-5 days, though they never last so long at our house.

My auntie also makes these ahead and freezes them. Thaw in the refrigerator shortly before serving. Make sure you wrap them well if you plan to do this, so the cake doesn’t get freezer burn.

Recommended Tools

A mixer is recommended for this recipe. I love using my KitchenAid mixer for this, but a handheld one will work as well.

A cutting board for assembling the cake is great as it keeps your counter from getting the sticky frosting and also for cutting the cake into pieces.

Notes

-Once the cake stands in the fridge, the layers of butter and dulce de leche will stiffen up. The waffles taste great that way. You can also take out the waffles half an hour before serving for a more softer version.
