Belgian Waffles with Kefir

These Belgian Waffles with Kefir are perfectly soft on the inside and a bit crispy
on the outside. Served with your favorite topping, they make an awesome breakfast.

Freeze any leftover waffles and throw them into a toaster for an easy breakfast when you’re in a hurry.

I first tried Belgian Waffles in Brussels, Belgium about a decade ago. I ordered a waffle covered with whipped cream and fresh strawberries. It was absolutely the best! We went back to the same place for seconds the next day. And I had the whipped cream and strawberries waffle again. To this day, this is my favorite waffle combination:)

Here is my version of this awesome recipe. The recipe is an adaptation from Cooking Classy. I simplified the recipe a bit and changed some things along the way to improve the taste a bit. This is the version I’ve been making for a couple of ears now. And we love it.

Ingredients for Belgian Waffles

Here is all you need to make these awesome Belgian Waffles:

  • Dry ingredients – flour, corn starch, baking soda, baking powder, salt, sugar
  • Wet ingredients – Eggs, Kefir, oil, vanilla extract
  • Toppings – to serve with the Belgian waffles (see serving suggestions below)

How to Make Belgian Waffles with Kefir

Oil your waffle maker and pre-heat if needed. My waffle maker is kind of old so I have to oil it to avoid the batter from sticking. Check the instructions for your waffle maker to make sure you are doing it correctly.

Add flour, baking powder, and corn starch in a large mixing bowl. Use a sieve to sift the ingredients through to avoid any lumps in the batter (especially baking powder). Mix well. Set aside.

In a separate bowl make the liquid part of the waffles. Separate the egg yolks and the whites. Set the whites aside and place the eggs into the bowl. Beat them a bit with a fork, then add the kefir, oil, vanilla extract, salt and baking soda. Mix well.

Beat the egg whites using an electric hand mixer. Once soft peaks form, add the sugar and beat well for a few more minutes until the sugar is dissolved and stiff peaks form. Set aside

Add the wet ingredients, to the dry ingredients and mix together until well-incorporated.

Fold in the egg whites into the batter. The egg whites should be mixed well into the mixture, otherwise you will have pockets of thin waffle where the egg white lump was in the dough.

Ladle 1/3 cup portions for each waffle into your waffle maker. Cook the waffles according to your waffle maker instructions. Mine take about 4.5 minutes to get done.

Toppings to serve with Belgian Waffles

  • Whipped cream (or alcoholic whipped cream) – one of the best toppings for waffles out there.
  • Fresh fruit – strawberries, raspberries, blueberries and maybe even peaches or apricots would go great with the waffles.
  • Powdered Sugar – just use a small mesh sieve to sprinkle on each waffle and you’re good to go.
  • Syrupsmaple syrup, agave syrup, chocolate syrup and honey are all great options.
  • Butter – yes, plain, old butter. Just smear a bit into each waffle indentation. This is a less sugary option for serving waffles and one of my favorites.
  • Ice Cream – add a scoop of your favorite ice cream to the waffle. No additional topping required.

Tips for Making best Waffles

  • Use room temperature ingredients if at all possible. This helps the salt and baking soda dissolve better and avoid having random, over-salted parts of waffles.
  • If you are making the waffles for a crowd, preheat the oven to 200° F (93° C) and place the finished waffles on a sheet in there. This will keep them warm and crispy on the outside, but will not overcook.

How to Store and reheat Leftover Waffles

The best way to store leftover waffles, in my opinion, is to freeze them. Just pop them in a toaster the next day and they’re hot and ready to be served in no time.

  • 1 ½ cups (213g) All-purpose flour
  • ½ cup (70g) Corn starch
  • 1 tsp Baking powder
  • 2 Eggs, yolks and whites separated
  • 2 cups (480ml) Kefir
  • 6 tbsp Vegetable oil
  • 1 tsp Vanilla extract
  • ½ tsp Salt
  • ½ tsp Baking soda
  • 3 tbsp Sugar
