Ham and Cheese Puff Pastry with Apples

This Ham and Cheese Puff Pastry with Apples is a tasty combination of cooked ham, melted cheese, sweet/sour apples, and juicy tomatoes. It’s hearty and filling and is perfect for a late dinner or even as a side dish. Serve with a dollop of sour cream or just plain. It’s good either way!

The original recipe for this puff pastry dish comes from my second mama (MIL). The original was a bit more complicated, but I’ve adjusted this to make it easy while still retaining the awesome combination of flavors. I hope you give it a try.

Ham and Cheese Puff Pastry Recipe (Step by Step)

Start by preheating your oven to 390° F (200° C).

Prepare Ingredients

Chop the cooked ham and peel, core and chop the apples into small pieces.

Finely chop the tomato. You can also chop into bigger pieces if you like, but I find that it spreads better when all ingredients are smaller.

Grate the cheese using a box grater and combine everything together in a bowl.

Preparing Puff Pastry Dough

Roll out the puff pastry dough and fold it lengthwise in half. Transfer to a baking sheet and fold the half back. Transfer the filling onto the puff pastry sheet and distribute evenly leaving about an inch of space at the edges.

Gently fold over the open half of the sheet over the filling lining up the edges. Note that the filling is pretty bulky and you will need to massage it to make the dough fold over and line up with the edges.

Use a fork to pinch the edges of the puff pastry together all around.

In a small bowl, beat an egg together to make an egg wash. Using a pastry brush, spread the egg wash evenly on the pastry. (This step is optional, but really gives the pastry a nice golden brown color).

Bake the Puff Pastry for 25-30 minutes or until golden brown.

Serve with a dollop of sour cream or as is. Just be careful not to eat it all up, although it’s tempting:)

How do you use frozen puff pastry?

Thaw your puff pastry in the fridge over night. Make sure it is fully thawed before using. If your puff pastry is not individually wrapped and is part of a bigger package, make sure to keep it well-covered, otherwise it will dry out and will crumble.

Can I make this Ham and Cheese Puff pastry ahead of time?

You can prepare the ingredients for the puff pastry and have it ready ahead of time. Put together right before baking. CAUTION: It is best to cut the tomato and add to the other ingredients right before baking as it gives off too much juice and doesn’t stand well.

How to Store this puff pastry

Store any left over puff pastry covered in the fridge. It can be re-heated on a skillet on low heat or in the microwave.

Tips for working with Puff Pastry

  • Keep the puff pastry cold. Only take it out of the fridge when all your other ingredients are prepared. Warm puff pastry becomes very sticky and hard to work with.
  • If using frozen, make sure the puff pastry is completely thawed before using. Make the pastry is well-covered when thawing.
  • If the pastry becomes too sticky while preparing this, put it in the fridge for 5-10 minutes.

  • 1 Tomato, medium/large
  • 7 oz (200g) Ham
  • 7 oz (200g) Cheese (I used Gouda)

  • Bake for 25-30 minutes, or until golden brown.
  • Serve with a dollop of sour cream or as is.
