Ingredients
14 oz (400g)Mushrooms(white button or cremini)
¼cupOlive oil
⅛cupFreshly squeezed lemon juice
1tbspRed wine vinegar
1-2Garlic cloves
Small bunch parsley
Small bunch fresh basil
4small twigsfresh Oregano
1tspSugar
1tspSalt
⅛tspBlack pepper
¼tspGround coriander
Chili flakes,to taste
Instructions
Cover the wooden skewers with water and let stand until ready to use.
Gently wipe mushrooms with a wet paper towel or cloth to remove any dirt. Slice the mushrooms into halves. Very big mushrooms can be cut into fourths. Transfer mushrooms to a bowl
For the marinade, combine the rest of the ingredients in a blender and blend until smooth.
Pour the marinade over the mushrooms and stir until the mushrooms are well-coated. Let stand for 30 minutes. Stir the mushrooms once in a while to re-coat them as the marinated will flow to the bottom. You can also use a plastic bag for this step, but I prefer to use less plastic in the kitchen, if I can help it.
Skewer the marinated mushrooms onto the wet skewers. Grill on medium-high heat for about 3-4 minutes per side or until the mushrooms are soft and have nice golden brown sears.
Remove from heat and serve. Alternatively, cover with foil to keep warm until ready to serve.
