Grilled Mushrooms on Skewers
These grilled mushrooms are absolutely delicious. They are incredibly versatile, easy to prepare, and packed with a rich, earthy flavor that pairs wonderfully with a variety of dishes. Whether you’re a seasoned grill master or a beginner, grilling mushrooms is a breeze and a surefire way to impress your friends and family.

Mushrooms are a great choice for grilling because they have a meaty texture that holds up well to the heat. They absorb marinades beautifully, which means you can infuse them with all sorts of delicious flavors. Plus, they cook quickly, making them perfect for a last-minute addition to your barbecue.

Ingredients for Grilled Mushrooms
Mushrooms – I used normal small mushrooms. Cremini would be good. Other bigger mushrooms can also be used, but would need to be cut smaller for the skewers.
Herbs – Basil, parsley, oregano, garlic
Liquids – extra virgin olive oil, lemon juice, and red wine vinegar
Seasonings – Sugar, salt, black pepper, chili flakes, ground coriander
How to Make Grilled Mushrooms
IMPORTANT: If using wooden skewers, make sure to place them in water before you start or for at least 30 minutes! This will ensure they don’t burn during grilling.
Another option is to use a grill basket for grilling the mushrooms. It has holes all around which allows the mushrooms to grill, but they’re small enough to keep them from falling into the coals.
Prepping Your Mushrooms
Start by cleaning your mushrooms. Gently wipe them with a damp cloth or paper towel to remove any dirt. Normally, I wash my mushrooms since the water is cooked out when they are sauteéd or cooked. However, when grilling, avoid rinsing them under water as mushrooms can become waterlogged, which affects their texture when grilled.
Next, cut the mushrooms in half. If the mushrooms are especially big, cut them into fourths. Transfer the mushrooms into a big bowl. You can also use a large zip-lock bag, but I like to save on plastic when I can so I use a bowl and mix them with a spatula once in a while.
Grilled Mushrooms Marinade
To prepare the marinade, combine all the ingredients except the mushrooms in a blender and blend together for 20-30 seconds.
Pour the marinade over the cut mushrooms in the bowl. Using a spatula or a spoon gently mix the mushrooms until they are well-covered in the marinade. Let the mushrooms marinade for 30 minutes. Stir the mushrooms once in a while during this time to ensure the marinade is evenly spread all over as it has the tendency to flow down to the bottom.
Grilling the Mushrooms
Preheat your grill to medium-high heat. If you’re using a charcoal grill, let the coals burn until they’re covered with white ash. Place the mushrooms directly on the grill grates.
If your mushrooms are small or you’ve cut them too small and as I’ve mentioned above, you can also use a grill basket to prevent them from falling through the grates.
Grill the mushrooms for a few minutes on each side until they are tender and have nice grill marks, about 3-4 minutes per side. Bigger mushrooms might take a bit longer, around 5-7 minutes per side, while smaller mushrooms will cook faster.

Grilled mushrooms are incredibly versatile. You can serve them as a side dish, toss them into a salad, or use them as a topping for burgers and sandwiches. They also make a great addition to pasta dishes or grain bowls.

Grilled Mushrooms on Skewers

- Wood Skewers
Ingredients
- 14 oz (400g) Mushrooms (white button or cremini)
- ¼ cup Olive oil
- ⅛ cup Freshly squeezed lemon juice
- 1 tbsp Red wine vinegar
- 1-2 Garlic cloves
- Small bunch parsley
- Small bunch fresh basil
- 4 small twigs fresh Oregano
- 1 tsp Sugar
- 1 tsp Salt
- ⅛ tsp Black pepper
- ¼ tsp Ground coriander
- Chili flakes, to taste
Instructions
- Cover the wooden skewers with water and let stand until ready to use.
- Gently wipe mushrooms with a wet paper towel or cloth to remove any dirt. Slice the mushrooms into halves. Very big mushrooms can be cut into fourths. Transfer mushrooms to a bowl
- For the marinade, combine the rest of the ingredients in a blender and blend until smooth.
- Pour the marinade over the mushrooms and stir until the mushrooms are well-coated. Let stand for 30 minutes. Stir the mushrooms once in a while to re-coat them as the marinated will flow to the bottom. You can also use a plastic bag for this step, but I prefer to use less plastic in the kitchen, if I can help it.
- Skewer the marinated mushrooms onto the wet skewers. Grill on medium-high heat for about 3-4 minutes per side or until the mushrooms are soft and have nice golden brown sears.
- Remove from heat and serve. Alternatively, cover with foil to keep warm until ready to serve.
