EASY Marinated Mushrooms

My mom used to make these mushrooms (or similar to these) when we were growing up. But somehow over the years, we forgot all about them. Until a few weeks back I got the urge to make them again.
In this recipe, fresh mushrooms are cooked for a bit and then marinated in a store-bought Italian dressing along with some chopped onion. The mushrooms turn out full of flavor and the dish can be served as an appetizer, side dish, or even a snack.
I have to admit I ended up eating almost the whole jar I made the first time I made these. My poor husband got a few bites, but that’s it. Almost immediately I made it again, this time doubling the amounts. They also disappeared in no time. I don’t know what it is about these. We just love them so much. They’re like a snack for us.

Marinated mushrooms are a fantastic way to add bold flavor to any meal. The combination of earthy mushrooms, tangy Italian dressing, and aromatic herbs creates a dish that is both refreshing and satisfying.
The best part about this recipe is that it uses store-bought dressing, so there is no extra cooking or prep involved. Since the mushrooms store well in the fridge, they are a great make-ahead option for any meal.
Ingredients for Marinated Mushrooms
Mushrooms – I use the white button mushrooms (widely available in grocery stores) or Cremini (baby bella) mushrooms. Both work good. Other mushroom varieties may also work well.
Onion – a medium-small white onion. Use more or less, as desired.
Italian dressing – I use a variety available here in grocery stores in Germany. Unfortunately, Italian dressing is not widely available here, so I use whatever I can find. I remember using Wishbone Italian Dressing for this back in the day. A good organic option might be this Italian Dressing from Whole Foods.

How to Make Marinated Mushrooms
Wash the mushrooms under running water. Make sure to remove all dirt and cut off any tough stems.
Cut the mushrooms into fourths if they are really big or leave as is if they are small enough. Transfer to a cooking pot. I love the small mushrooms because they are just so cute when they are done, but they aren’t always available. So, often I end up cutting them into fourths.
Bring the mushrooms to a boil in a pot of water and cook the mushrooms for about 4-5 minutes. You can cook them less, but I don’t recommend cooking longer than 5 minutes. A lot of the water boils out and they become very small in size.
Drain the mushrooms and let them cool slightly. Use a fine mesh sieve for easier draining.
While the mushrooms are cooking, coarsely chop a small-medium onion.
Add some of the cooked mushrooms to a jar with a lid. Then add a bit of the chopped onions. Keep layering the mushrooms and the onions until both are used up.
Pour the dressing over the mushrooms until they are mostly covered with the dressing.



Refrigerate for at least 12 hours or overnight. In a pinch, these can be served after 7 hours, but they are more flavorful after 12.
How to Serve Marinated Mushrooms
These marinated mushrooms are incredibly versatile! Here are some great ways to enjoy them:
- As an appetizer – Serve them chilled or at room temperature with crusty bread.
- In salads – Toss them into a fresh green salad or an antipasto platter.
- As a side dish – Pair them with grilled meats, roasted vegetables, or pasta.
- On a charcuterie board – Add them to a spread of cheeses, olives, and cured meats.
- As a side dish – just throw some in a bowl and enjoy any time of the day.
Tips and Variations for Marinated Mushrooms
- Let them marinate longer – The longer they sit, the more flavorful they become.
- Add fresh herbs – Add fresh herbs to the ones already in the dressing. Herbs, like basil and oregano will elevate the flavor. I’ve also tried adding fresh garlic, but the flavor was too intense for my taste.
- Store properly – Keep marinated mushrooms in an airtight container in the refrigerator for up to 5 days.
- Use different dressing – different dressings will have different flavors and will make the mushrooms a bit different. Find your best flavor by testing out a couple

- 1lb (500g) Mushrooms
- 1 med-small Onion
- 1 cup (300ml) Italian dressing (or enough to cover mushrooms)
Instructions
- Wash the mushrooms under running water. Make sure to remove all dirt and cut off any tough stems. Cut mushrooms into fourths or leave as is if they are very small.
- Bring the mushrooms to a boil in a pot of water and cook the mushrooms for about 4-5 minutes. They will reduce in size. Once done, drain the mushrooms and let them cool slightly. Use a fine mesh sieve for easier draining.
- While the mushrooms are cooking, coarsely chop a small-medium onion.
- Add some of the cooked mushrooms to a jar with a lid. Then add a bit of the chopped onions. Keep layering the mushrooms and the onions until both are used up.
- Pour the dressing over the mushrooms until they are mostly covered with the dressing. Refrigerate for 12 hours or overnight.
- Serve cold. Can sprinkle with green onion for some garnish.
