EASY Grilled Zucchini Slices

We love these Grilled Zucchini Slices. They are easy to prepare, full of flavor, and a great way to use up that plentiful zucchini harvest.

We love grilled food around here and I’ve just been trying out different kinds of foods on the grill – from radishes to pineapple and what not. And of course zucchini did not escape my zeal for grilling. I really like the taste of the grilled zucchini. It really takes the zucchini to the next level and goes so well with a grilled meat.

Give this grilled zucchini recipe a try next time you fire up the grill.

Ingredients for Grilled Zucchini

Zucchini – I usually use green, but yellow could work too.

Olive oil – to cover the slices and prepare them for grilling.

White wine vinegar – my favorite way to add some tanginess to the zucchini. Lemon juice would work too.

Garlic powder – can also use some onion powder or other herbs.

Salt – can also add ground black pepper, but I like to just add the salt.

How to make these Zucchini Slices

Preheat the grill to medium heat. We generally grill our veggies when we grill somekind of a meat; never separately just to grill some veggies. So our grill would already be on in this case.

Wash the zucchini and cut off the ends from each side. Slice the zucchini into slices about 1/4 inch thick. I like using my mandoline slicer on the thickest setting for this. Place into a casserole dish or another dish where you can lay the slices in a single layer.

Sprinkle the olive oil on the top of the slices and use a brush to spread it or gently mix with your hands so that the oil is on all the sides of the slices.

Sprinkle white wine vinegar and gently mix again. Sprinkle with garlic powder on all sides.

Grill the slices 2-4 minutes per side or until the zucchini gets char marks but is still firm to the bite.

Remove the zucchini back into the same dish. Sprinkle with salt and ground black pepper (optional). I don’t adding pepper to my zucchini, but if you like it, sprinkle it on the top.

Note: you can add the salt and pepper at the time of adding garlic powder, but salt brings out the zucchini juices, which then makes the zucchini more soggy when you grill it. Arguably, the vinegar will do a bit of that too, but the grilled vinegar taste is something I like as it gives the zucchini a more incorporated tangy flavor, so I add it before grilling.

How to Serve Grilled Zucchini

Serve the grilled zucchini slices still warm along with your choice of meat. We love it with steak, or these awesome grilled chicken thighs.

Tips and Tricks for Making

My biggest tip is to watch out when grilling the zucchini. Depending on how hot your grill is, the zucchini can get burnt fast. If the grill is very hot (harder to control with charcoal grills), flip the slices often or try placing farther away from direct heat. You want to get the char marks, but getting these things burnt is not fun.

Grilled Zucchini Recipe Variations

Instead of just adding garlic powder or salt, add other herbs to the mix. I can recommend using oregano, a mixture of italian herbs or french herbs. It gives the zucchini a different flavor profile. You can also use lemon juice instead of white wine vinegar, but I find the tanginess is too mild and prefer to use a vinegar in this case.

How to Store and Reheat

Store the zucchini covered in the fridge. I love my glass pyrex containers for this as they come with lids and are make storage very easy.

To reheat, pop these grilled zucchini into the oven for a few minutes. We are a microwave-free home, so I don’t have experience of reheating these in the microwave, but it should work. You can also just enjoy the zucchini slices cold (it still tastes very good)!

Recommended Tools

A mandolin slicer makes the prep go super fast. Or just use a very sharp knife and a cutting board.
