Growing up in Kazakhstan we didn’t have juices available to us. I’m not sure if the grocery stores carried them at that time (grocery stores were still kind of developing then if I remember correctly), but we definitely didn’t have them at home. Instead, my mom would make Kompot – this fruity drink that we loved to enjoy.
We had our own orchard growing up so fruits like apples, plums, peaches were available to us. Freezing space was limited though, so a lot of times the Kompot would get canned (along with some of the fruit) to be enjoyed year round.
Though Kompot is mostly drunk cold, it also tastes great when it’s hot. It can be enjoyed year-round. Cold and refreshing in the summer and hot and cozy in the winter.
Ingredients for Kompot
Water – main ingredient:)
Frozen or fresh fruit – do whichever combination of fruit you like, or follow the recipe and use Apples and Raspberries
Sugar – plain white sugar. You can also use raw sugar or cane sugar or whatever you like. You might be able to use honey or another syrup as a sweetener instead of sugar, but I have not tested that here.
How to Make Kompot
In a big pot, bring water to a boil. Meanwhile, core the apples and cut into quarters or smaller.
Once the water is boiling, add the apples and frozen raspberries. Simmer for 5 minutes.
Add sugar and stir until dissolved. Serve.

TIP: Add the sugar once the fruit has had the chance to simmer and let out the juices. Start with adding less sugar as the sugar content of the fruit varies and the Kompot might end up being too sweet (though if that happens, just add ice before serving and you will thin it out).
That’s it! It’s really that easy. Let it cool and serve cold or enjoy a couple of cups while it is still hot.
Recipe Variations
It is so so easy to vary this recipe. Just change up the fruits that you want to use. Also, use more or less sugar to get a sweeter or more tangy drink. Some fruits and berries that can be used in Kompot:
- Apples, Pears
- Cherry, Plum, Peach, Nectarine
- Berries: Raspberries, Strawberries, Blackberries

How to Serve Kompot
- Hot Kompot – Serve Kompot hot right after it is cooked for a hot and cozy drink – so nice in the fall, winter, or spring. I usually drink a couple of cups right when it is done and is still hot and steamy. It’s very heartwarming and is almost like a hot tea.
- Cold Compot – Served cold, Kompot is very delicious and refreshing, like juice. I love making it instead of buying juice in the summer (or all year round).
- Extra fruit in the drink – Kompot is usually served without the fruit that was used to make it. Use a sieve when pouring the drink before serving to sift out the fruit. However, one or two berries/fruits can be kept floating in the drink for garnish.
How to Store Kompot
Once the Kompot has cooled down, transfer to a glass pitcher or carafe. Cover either with a lid (if available) or plastic wrap. Store in the fridge for up to 5 days.
TIP: Store the Kompot directly in the pot you cooked it in and replenish the glass containers/carafes before serving if you don’t have enough to store all of it at once.
Kompot can be canned though I have not done it as I have enough freezer space that I can make it fresh from frozen fruits anytime. If you’d like to make an extra batch to can, follow the National Food Center for Home Food Preservation canning guidelines from Canning Fruits and Fruit Products: Apple Juice. Though their instructions are for pure apple juice, so I am not sure if anything else needs to be considered.
Recommended Tools
A big cooking pot will allow you to make a big batch of this drink without a problem. I recommend using a fine mesh sieve to sift out the fruit before serving.
