BEST Burger Sauce Recipe
This burger sauce recipe is something else. Using caramelized onions,
pickles, mayo and sriracha, it’s easy to make and so good you’ll want to lick the spoon.

I first tried a variation of this burger sauce recipe when my sister-in-law brought it over and we were making burgers at our place. She kind of told me what went in there and I forgot about it for a while.
I finally made this sauce from memory at some point and it was just as good as I remembered. Anyway, here is my version of this absolutely awesome, ridiculously good burger sauce recipe.
Ingredients for Burger Sauce
- Onion – plain white onion. Shallots would work too.
- Pickles – I loved using a version made with Habaneros and mangoes. They have such a great kick to them. Plain pickles are good too, but the sauce will be more plain.
- Mayonnaise – any kind should work.
- Sriracha sauce – we love the original Huy Fong sauce
- Sweet paprika – gives the sauce a pink/orange hue, which looks so nice.
- Black pepper – freshly ground is best
- Pickle juice – to thin out the sauce if desired. Water can also be used instead.
Instructions for Burger Sauce Recipe
Peel and finely slice the onion. You can also dice finely if you like instead. Both ways work. It’s just a matter of preference – if you want longer caramelized onion pieces in your sauce or little diced ones.
Add the olive oil to a small saucepan or skillet. Sauté the onions in the pan for about 10 minutes on medium-low and then another 15 minutes on the lowest setting.
Make sure to stir the onions as much as possible so that they don’t burn. You want them caramelized, but not burned. Depending on your stove, you might be able to just sauté on low for the whole time. With my stove, it just seems it wasn’t getting enough of the brown color on the very low heat.
In the meantime, when you are not stirring, finely slice the pickles and add them to a glass bowl. I love using the 1 cup Pyrex glass storage containers for this as the portion fits in there perfectly and I can cover and stick the sauce in the fridge.
Add mayo, sriracha sauce, paprika, pinch of black pepper, and the caramelized onions (once done) to the pickles. Mix everything together well. Add 3-4 teaspoons (or to taste) of the pickle juice and mix everything again until the pickle juice is well-incorporated.
You can add more or less pickle juice to the sauce, if you would like it to be more or less runny. You can also use water instead if you want your sauce to be more plain.
Store the burger sauce in the fridge until ready to serve.
What to serve Burger Sauce with
Burgers are not the only thing this burger sauce is good for. It is also great for dipping french fries into and it’s awesome on other sandwiches. Also, if you like eating sauces (like BBQ sauce) with your grilled meat, this sauce would also be an awesome sauce for that.
How to Store this Burger Sauce?
Store this burger sauce in an airtight container in the fridge. As I mentioned above, I love using my Pyrex containers for this. If you make it directly in the storage container you don’t need to transfer to one or use cling wrap for storage. You have no extra dishes to wash, the sauce looks good in the sauce container. Win win situation! Use up the sauce within 3-5 days so it doesn’t go bad.

Burger Sauce Recipe
Ingredients
- 2 Small onions
- 1 tbsp Olive oil
- 4-5 Pickle slices, or to taste
- 1 cup Mayonnaise
- 2 tsp Sriracha sauce, or to taste
- ¼ tsp Paprika
- Black pepper to taste
- 3-4 tsp Pickle juice, or to taste
Instructions
- Peel and finely slice the onions. Or dice as fine as possible.
- Heat a small skillet and add olive oil. Add the cut onions to the oil and sauté on low heat for 20-25 minutes or until the onions are caramelized. Make sure to stir once in a while as the onions can burn fast.
- Meanwhile, finely slice the pickle slices.
- In a small bowl, combine mayonnaise, Sriracha sauce, sliced pickles, sautéed onions, paprika, ground black pepper and pickle juice. Stir until well-combined. Add more pickle juice (or plain water) to thin out the sauce, if desired.
- Refrigerate before serving.
