I’ve been making cold brew coffee for years now. It’s one of my favorites in the summer. I also love lavender and planted a whole bunch in my garden. I specifically looked for a variety that is edible (though I’m not sure if they all are).

Anyway, last year I decided to find a way to incorporate that lavender in coffee and this honey lavender cold brew latte was born. Somehow I didn’t have enough time last year to post before our short summer was over. This year, I came back to it and perfected the recipe and here we are. I hope you love this as mush as I do.

How to Make a Honey Lavender Cold Brew Latte

Made with simple ingredients and a no-cooking syrup, this latte is easy to make and even easier to enjoy.

Ingredients

Cold Brew Coffee – use my Addicting Cold Brew Coffee recipe to make the cold brew or any other if you already have one

Lavender – I used a sprig of fresh lavender right out of my garden. Dry should work as well. You can get dry edible lavender flowers on Amazon if you don’t have any of your own.

Honey – any kind would work. We currently have acacia honey which is very light in color and has a very light, pleasant taste (If you’ve ever tried forest honey, you know that honey can taste unpleasant:). We always try get local honey as it’s more beneficial for you, but use whatever you have on hand.

Milk – we only buy whole milk around here, but use what you have. Nut milk alternatives might also work well here, but I didn’t test them.

Vanilla extract – I make my own vanilla extract as it’s very expensive in Germany and actually they used to not sell it here at all. So I ended up making my own.

Ice cubes – absolutely necessary to make this iced:)

Step-by-Step Instructions

Add the lavender flowers to a cup, mix with honey pressing the flowers a bit with the spoon and let stand for 10-15 minutes to infuse the honey with the lavender taste.

Add about 1/4 cup of cold brew coffee and the vanilla extract to the honey and lavender mixture, and mix well until the honey lavender is well incorporated into the coffee. This might take a minute if your coffee is very cold.

Using a small sieve, strain the coffee into a different glass to remove all the lavender bits. You can also leave them in the cup as they are edible. I just like to remove them for a smoother taste.

Add the ice cubes, 1/2 cup more cold brew coffee, and a splash of milk. Stir gently to combine the flavors and enjoy.

You can garnish your drink with a sprig of fresh lavender. Looks so pretty.

Tips for the Perfect Honey Lavender Cold Brew Latte

  • Adjust the Sweetness: The honey lavender mixture can be customized to your liking. Add more or less honey depending on how sweet you want your latte. Same goes for vanilla extract.
  • Experiment with Milk: Different types of milk or milk alternatives will give your latte a unique flavor and texture. Oat milk adds a creamy richness, while almond milk lends a nutty note.
