Refreshing Radish Cucumber Salad

This Radish Cucumber Salad is one of the easiest and yet tastiest salads to make. Crunchy cucumbers and radishes combined with sour cream and green onions give a creamy, refreshing salad that is fast to prepare and is so nice to serve in the summer.

This is one of those salads that has been in our family forever. We grew up eating it and probably every Slavic / Russian family has their own version of it. For some reason I usually associate this salad with summer. Probably because radishes and cucumbers are so abundant in the summer, though of course, the salad can be made year round.

Ingredients needed for this Radish Cucumber Salad

Cucumbers – Any kind of cucumber would work here. I prefer little pickling cucumbers when I have them, otherwise, I use snack cucumbers or an English cucumber

Radishes – The normal red radishes are probably the most well-know. I think the salad would work great with any kinds of radishes. In my experience, homegrown radishes are more spicy and full of flavor than store bought, which makes the salad more flavorful.

Green Onion or Chives – Use whatever you have on hand, or even both. I like using green onion because it is less mild than the chives, but either one would work here.

Sour Cream – The only “dressing” needed for this salad. Makes it very creamy.

Salt & Pepper – No additional herbs and seasonings are needed.

How to Prepare Radish Cucumber Salad

Wash your cucumbers and radishes. Slice both into small pieces. I like to cut both the cucumbers and radishes in half and then slice them into semi-circles. If you’re using a large cucumber like the English cucumbers they can be cut into fourths.

It’s also possible to just slice the cucumbers and radishes into circles, but depending on the size of them, it might be harder to eat.

Rinse the green onions and slice thinly.

Transfer everything to a medium-sized salad bowl.

Add the sour cream and season with salt and pepper. Mix everything well making sure the sour cream is well-dispersed and leaves no clumps. Otherwise, someone can get a spoonful of sour cream in the salad:)

Serve immediately. Once the salad stands a bit, the cucumbers and radishes will give off lots of juice and the vegetables will become soggy. So it is best to serve the salad right away.

Make ahead Instructions and Storage tips

You can make this Radish Cucumber Salad ahead of time. Just chop the vegetables, cover and refrigerate. Add the sour cream and seasonings right before serving. Mix well, and serve immediately.

Store in the refrigerator for up to one day. The salad will have given a lot of juices off. Just pour off the juice and enjoy the salad. I also like the taste of the juice, so I just keep it, if I have left over salad. It still tastes great, though it won’t look as nice as when it’s freshly prepared.

Ingredients

  • 1 bunch Radishes (12-15)
  • 2 Small cucumbers (or half a large English cucumber)
  • 1 bunch Green onions
  • 1 tbsp Sour cream
  • ¼ tsp Salt or to taste
  • Black pepper, to taste

Instructions

  • Wash and chop the cucumbers and radishes into half-moons. Transfer to a salad bowl.
  • Chop the green onions and add to the cucumbers and radishes.
  • Add sour cream and salt and pepper.
  • Mix well ensuring the sour cream is well-distributed without any clumps. Serve right away.

Notes

– It is best to serve the salad right away. As soon as you add the sour cream and the salt to the vegetables they will start producing juice and after a while will become soggy. To prepare ahead, chop everything and set aside. Add the sour cream and seasonings right before serving.
